Nougat is a French delicacy, coming mainly from Montelimar. White, soft or hard, it can take various forms, but its taste is always a perfect balance of the ingredients. Nougat is generally made from sugar, honey, almonds and pistachios, vanilla and white eggs. Montelimar Nougat is a controlled appellation and should contain at least 30% of almonds (or 28% almonds and 2% pistachios) and 25% of Lavender honey.
The name comes from the latin “nux gatum” (“gateaux de noix”, “nuts cake”). The delicacy is historically from South of France, and especially from the Provence area. Montelimar replaced the original nuts by the almonds and gave the nougat its unmistakable characteristics.
The nougat is often expensive on markets because it takes a long time to make the delicacy.
